Tasting Notes
The Panel noted a luscious combination of dark fruits with exotic undertones at first nosing. We found dried tropical fruits, fruit chutneys and jams alongside appearances by balsamic and rancio. Water brought weighter elements such as cooking oils, putty, beeswax and sultanas. The neat palate was beautifully fruity and elegantly sherried at first, delivering lots of bright jammy fruits, dark chocolate studded with sea salt and walnuts. Some water revealed cranberry gravy, fruity black coffee and green walnut liqueur before a lovely earthy, gently salty finish. This was matured in an ex-bourbon hogshead for 14 years before being transferred to a first fill oloroso hogshead.
