Tasting Notes

A wonderfully dense and thick nose, typical of this notoriously 'farmyard' distillery. Immediate notes of caramel sauce, chewing and pipe tobaccos, plum wine, five spice and strong black tea. We also noted vibes of old leather, salted liquorice and old school cream sherry. With water we found rum n' raisin fudge, hessian, chocolate sauce, herbal wines and natural tar. The neat palate opened with stodgy Dundee fruit cake, dark fruits soaking in Guinness, butterscotch, hessian, dried bergamot and tang of peat smoke. Really old school and excellent. With water it evolved towards super old school classical sherry flavours of rancio, walnut oil, espresso and cinnamon pastries. Things like treacle sponge, pecan pie and madeira cake were all noted. Matured for 12 years in a bourbon hogshead before transfer to a 1st fill American oak PX sherry hogshead.
