We all came up with descriptors which were yellow such as lemon bonbons, apricot wine, pineapple tarts, hay, marigold and stem ginger. On the palate, almond oil, sheets of marzipan, candied hazelnuts, summer fruit cordial and those chewy sweet lemon bonbons, which have a surprising spicy centre. Following reduction, the yellow theme was still there, but now in the form of a banana milkshake and a lemon cake with lemon cream cheese frosting. To taste we found key lime cream puffs, fizzy love heart sweets, toffee apples coated in candied fennel seeds and salt and pepper flavoured banana chips in the finish.
