Tasting Notes
We felt this one exhibited a very soft, easy and classical sherry profile, one commonly associated with this family-owned Speyside distillery. We noted lots of fig jam, prunes in armagnac, almond paste, cedar wood and freshly baked brown bread. Water brought caffè latte, brown sugar, toasted almonds and bacon-flavoured corn snacks. The neat palate displayed clean wood spices, strong darjeeling tea, chenpi orange peels and rich tobacco. Reduction brought a lovely, sustained dark fruitiness, alongside a mentholated quality, big notes of treacle and an umami, savoury finish. At 11 years of age, we combined two first fill ex-bourbon barrels from the same distillery into this cask for further maturation and marrying.
