Tasting Notes
After nine years in ex-bourbon wood we shifted this into a first fill Spanish oak oloroso hogshead. The end result is an elegant and refined nose that offered polished oak, beeswax, brandy snaps, candied orange peel and after dinner mints. The palate’s beautiful, deep, sweet mouth caress of malt extract, jaffa cakes, Turkish delight, dessert wine and sweet tobacco also had hints of sage, fennel and thyme, and a mild finishing heat of chilli and pepper. With water, the nose found fig rolls, cherry jam roly-poly, a dark chocolate orange, vanilla, honey and charcoal. Our palates rejoiced in Highland toffee, brown sugar, dark cherries, bergamot and Pineau des Charentes.
