Tasting Notes
We nosed redcurrants and lingonberries in a game of battleships with coconut shavings and banana chips, sailing on a walnut oil swell. The palate was a butterscotch-spiced rum and a blend of craft cola and cream soda, stirred with an artist's fine pencil. Water gave both the nose and palate accents of custard, toffee apple and orange sherbet. The finish was caramel and oak in Viennese coffee. After 14 years in an ex-bourbon barrel, we transferred this to a custom-toasted, high-lactone American oak cask for the remainder of its maturation.
