Bold aromas of burnt caramel, red liquorice and cherry jam mixed with the more savoury elements of Mediterranean herbs, sandalwood and honey-roasted parsnips. The palate delivered a wave of spice as nutmeg and ginger combined before toasted sesame oil, brazil nuts and roasted chestnuts joined apricots, plums and figs. With water the deep fruits morphed into heavy fruitcake topped with brown sugar, while fresh coriander met fresh pine, vintage riesling and chamomile tea. Flavours had now calmed to black butter and Seville orange marmalade on burnt toast with sautéed mushrooms, peach iced tea and dry stone fruit tannins. Eight years in an ex-bourbon hogshead before being transferred to a toasted Caucasian oak first fill barrique.
