Tasting Notes
At first nosing the Panel detected such things as treacle, ink, bergamot and dried exotic fruits. The cask evidently had a lot to say but the fruitier notes were balancing it very well. With water we got sweet red fruit jams, plum wine, aniseed, marzipan and fruity cough sweets. The neat palate was quite powerfully medicinal, with cherry cough syrup, then baked apple pie, red liquorice, herbal cocktail bitters and ruby winter ales. Some water brought out cedarwood cigar boxes, wood spices, clove oil, dried mint, camphor and tarragon. This was matured in a bourbon barrel for 12 years before being transferred to a first fill heavy toast medium char barrel.
