Tasting Notes
The smell of tar covered decking blended with bursts of apples and raisins stewed in calvados, as asparagus and duck breasts sizzled on a barbecue with hoisin sauce. The palate brought a rounded warmth that suggested a large tot of spiced rum and Jamaican ginger cake served on banana leaves. Deeper notes emerged with water as we discovered fresh tobacco, cloves, mace and star anise alongside the rich indulgence of Tokaji dessert wine and hot chocolate with cream. Then layers of figs, pineapples and prunes covered toffee and caramel as barbecue notes returned with crispy pork belly and charred oak. After spending nine years in an ex-bourbon hogshead this was transferred to a first-fill barrique for the remainder of its maturation.
