Smoked and salted peanuts, snapped green twigs, shucking oysters with a rusty penknife, oily bike chains and fresh crab splattered with iodine drops. Some singed heather and salty liquorice dipped in honey. Reduction unveils aromas of hot swimming pools, smoked almonds, dried sage, melted fishing wellies and buckets of hot tar. The palate is a collision of sweet smoke and salty preserved lemons in brine. Arbroath smokies, hessian sacks, tarry rope, black pepper, verbena and smoked wormwood. Water brings a green fern note, iron filings, smoked olive oil and a hint of lemon curd.
