Tasting Notes
A fresh and floral aroma greeted the Panel with descriptors such as pear drops, lemon cleaner, liquorice-flavoured lozenges and a potpourri of violets and apple blossom. On the palate came custardy, creamy mouthcoating with flavours of honey, Turkish delight and raspberry-flavoured foam shrimps, as well as blue raspberry candy laces. Following reduction, we found rum and raisin baked apples cooked with dark rum, crushed walnuts, cinnamon, nutmeg and cloves alongside lemon peel and coriander seeds. A chalky, slightly waxy mouthfeel now, with delicate hints of anise, mace and white pepper. In the finish we enjoyed chocolate truffles with liqurice and hazelnuts.
