An eclectic aroma of fennel seeds, coriander seeds, lime peel, violets, lemon rose petals and Szechuan pepper as well as a combo of muddled cranberries and juniper berries greeted the Panel. Very mellow on the palate unreduced, light and nice with fresh sweet citrus flavour followed by a hint of coconut and whipped cream but leaving plenty of space for the botanicals to play their part too. Reduced, we made a blushing gin and tonic with chopped fresh strawberries as we used mint leaves and fresh lavender for garnish, while to taste, it turned into a white lady cocktail of gin, lime juice, sugar syrup, egg white and violet liqueur.
