Lean, clean and saline noted the Panel initially. Porridge laced with honey, some bacon lardons frying in the background, newspaper ink and subtler notes of hessian, soda bread and dried heather flowers. Elegant but with firm and assertive personality. Once water was added we found Victorian cough mixtures, salty pasta water, pollens, starched linens and things like fresh glossy magazines, rapeseed oil and white flowers. The palate was immediately full of salted honey, aged mead, grassy olive oil and crushed peanuts. Some watermelon and mango fruitiness along with yogurt-coated Brazil nuts and granola bars. Water added heather honey, wet sand, sea air and coastal flowers. A lick of chalky medicine in the aftertaste.
