Tasting Notes
The nose – mm – sharp, fresh, vibrant and head-clearing – candied lemon, damson liqueur, cassia bark and charred oak. The palate is fruity, herbal and interesting – loadsa lemon (lemonade, lemon curd, verbena) and honey; then burnt twigs and star anise to finish. On the reduced nose, lemon zest is tossed around with mixed herbs (including basil and thyme) and scattered over the grass – a bright, breezy botanical beast with hints of sucked butterscotch and Murray mints. The palate now includes sweet hay, freeze dried strawberries, vanilla and macadamia nuts – a bit more multi-dimensional than before; the finish discovers ginger, chilli and white pepper.
