“There is a rosebush in full bloom on fire”, or “is someone burning incense sticks of camphor, tar or blackcurrant?” It certainly got us going somewhat crazy! On the palate a sweet, floral, wood smoke explosion – had the pine forest next to the rose bush also caught fire? Water rescued the situation and we could relax having smoked venison carpaccio with brown sugar, hot sauce, paprika and shallots followed by slightly burned vanilla cupcakes with strawberries and whipped cream. After 11 years in an ex-bourbon hogshead we transferred this whisky into a second fill charred wine barrique with toasted heads.
