Bruised apples and maraschino cherries arrived with a dusting of sea salt and dried herbs before driftwood and oak were polished with wax and oil. The palate swung from creamy vanilla and spicy wood to dark chocolate covered raisins dipped in rock salt and orange oil. A dash of water took us to a fairground by the sea with the smell of candyfloss and toffee apples merging with the thick oil of mechanical gears and exhaust fumes. Finally, a cherry pie topped with toasted walnuts accompanied creme brûlée and vanilla custard before fresh dough and chocolate faded to gentle spice on the finish.
