A sumptuous and totally classical example of this great make. Initially a plethora of citrus curds, fragrant waxes, mineral oils, waxed canvass, hessian, gorse flowers and coconut milk. Then beach mosses, rock pools and buttered soda bread. Water gave us baking soda, salted flat breads, white pepper, crisp cereals and peppery watercress with a hint of resinous fir cones. The initial palate showed an abundance of pineapple and syrupy fruit salad juices. Vanilla cream soda, lemon pith, citrus infused olive oil, tarragon and herbal ointments. Reduction brought the sweetness of jellybeans, pineapple cordial, fruity cough sweets, melon liqueur and passion fruit sorbet. More bubble-gum and wax in the aftertaste.
