Tasting Notes
The scent made us wobble like a cava and raspberry liqueur jelly, with raspberries, double cream and sprigs of mint. On the palate came almond butter chocolate chip cookies, a flamed orange twist and a star anise-spiced apple cider. Following reduction we were firmly in Spain – either preparing sangria or a kalimoxto (equal amounts of red wine and cola, with a squeeze of lemon juice). Tasting, we stayed in Spain with a dulce de membrillo (sweet quince paste), and an orange salad with fennel and black olives. At two years of age, we combined selected casks from the same distillery into a variety of different casks to develop further. This is one of those casks.
