Tasting Notes

Light, delicate and sophisticated at first nosing. We found notes of fruit jellies, floral complexities, sweet herbal teas, cough syrups, pineapple cubes and elderflower champagne. Some sweetie necklaces, runny honey and baled hay. With water we noted pine sap, white flowers, petrichor, fruit salad juices, madeira sponge, pistachio ice cream and a pure, clean barley richness. The mouth was vivacious and wonderfully layered and textural. Remarkable minty notes with passion flowers, exotic fruit syrups from a tin, Cherryade, lime curd, jasmine, bubblegum and lemon barley water. Reduction revealed a very deft waxiness along with putty, polished cereals, warm brioche, crumpets, buttery toast, ice cream cones, wafer biscuits, peach stones and freshly milled malt. A terrific surprise we agreed.
