Tasting Notes
A traipse along the shoreline with coastal greenery, white flowers, chalky pebbles and flint smoke. Crystalline, pure and very fresh. Water brought gutsier notes of tugboat exhaust, Fisherman's Friends and root beer. Also touches of iodine, lanolin and smoked sea salt. The palate opened with this very typical soft, herbal peat smoke along with old style cough medicines, cured white fish, Twiglets and aniseed balls. Reduction brought dried white flowers, samphire in salty butter, drying kelp, green olives and distant, trailing peat smoke. At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
