Tasting Notes
A lovely initial aroma, full of sweet glucose and impressions of salted honey. Caramel notes also emerged along with more aromatic subtleties such as gorse, cactus, soda bread and lamp oil. Some pineapple chunks mushed into sourdough bread. Water gave us poached pears, pineapple yoghurt, myrtle, wintergreen and bergamot. The mouth was initially bubbling with sweet, yeasty goodness. Cookie dough, dried papaya, fruit scone mix, hot cross buns and baked banana ice cream. Reduction added lemongrass, olive oil, lemon barley water, chamomile and chopped fennel.
