Tasting Notes
I'll have the chardonnay-butterscotch sauce to go with my mature cheddar and dried apricots please. Nose a little deeper to teleport to an ancient stone fireplace where a plate of oatcakes drizzled with honey awaited. On the palate, the butterscotch was present in a mulled form, with a sticky grape juice reduction drizzled over watermelon segments, delivering a wonderfully vibrant and heady fruit intensity, with crème anglaise on the finish. Water served only to enhance the dram's moreishly sweet and vanilla-forward backbone. Victoria sponge and quince emerged on the nose, alongside flapjack and popping candy. The mouthfeel became lighter on the reduced palate, but an exciting plummy note joined lemon curd and croissants.
