Tasting Notes
The initial nose was sweet, complex and subtle exotic. Unfolding notes of natural tar extract, iodine drops, TCP and warm Bakelite. Then bigger aromas of black pepper, smoked olive oils, leather peat, brine and pickled black olives all emerged. Water brought out some very classical notes of old tarry rope, sweet oily peat, petrol and shucked oysters doused with Maggi liquid seasoning. The neat palate opened on smoked cola syrup, root beer, pickled anchovies and hot charred earth. Beyond that we got five spices, waxes canvass and anthracite embers. Water unveiled dandelion and burdock, crushed wildflowers, horseradish and vapour rubs. Matured for 20 years in a bourbon hogshead before transfer to a 1st fill STR barrique.
