Tasting Notes

A German proverb says literally “the cherries in the neighbour’s garden always taste sweeter” (the grass is always greener on the other side of the fence). And those cherries were deep red, firm and juicy, so wonderfully sweet with a vibrant aftertaste. After reduction the aroma was of warm scones with cherry jam and clotted cream as we eat a cherry pie. Gretchen Peters, American singer and songwriter, sings “if heaven was a pie, it would be cherry, cool and sweet and heavy on the tongue” - this felt like heaven. Following 13 years in an ex-bourbon hogshead, we transferred this whisky into a first fill American oak PX sherry hogshead.
