We sat on the harbour wall and opened our lunch box – Caprese salad made of sliced fresh mozzarella, tomatoes, sweet basil and seasoned with olive oil and salt. Definitely ‘seaside-y’ on the palate as we drank a truly Japanese kombucha – seaweed tea with the addition of a touch of smoke followed by saltwater taffy. Water added a scent of fresh manzanilla sherry ‘green-ness’ or a cold glass of Pouilly-Fume wine with a menthol tobacco smoke in the background. Sweet, soft and easy to taste, delicious, slightly smoked white grapes (using cherry blossom wood chips) combined with an intriguing chocolatey earthy vibe.
