Tasting Notes

The Panelists picked out plenty of fruity sweetness on the neat nose, with red apples, barley sugars, jelly babies and popcorn, as well as lavender and vanilla. On the palate there was the citric sweetness of an old-fashioned homemade lemonade, before the creaminess of a succulent cherry meringue pie and vanilla fudge emerged. Following reduction, we found vanilla ice cream with warm chocolate sauce next to a savoury note of grilled miso and honey-marinated aubergines. To taste this was fresh and minty like a lemon sorbet, before a cinnamon tea spiced with cloves and star anise and sweetened with a Mexican brown sugar called panela.
