Tasting Notes
Intense and full on, with big notes of dark chocolate, cherries and oak – we imagined eating a slice of black forest gateau in those typical cathedral-style warehouses of a sherry bodega. There was plenty of sherry goodness on the neat palate, with raisins, tobacco, toffee, caramel, old oak and old leather-bound cask ledgers. After reduction, a more savoury note appeared as we got peanuts, pickled ginger, shortcrust pastry and chutney. However, always in the background was that sweetness of caramel brownies. The taste resembled flavours of salted chocolate fudge cake and a bitter liqueur based on wormwood from Croatia called pelinkovac. Following 12 years in an ex-bourbon hogshead, we transferred this whisky into a first fill ex-bodega PX barrique.
