The Panel noted pork and lamb kebabs and suggested they might have been prepared by someone in full surgical scrubs! More latex gloves, wellington boots, smoked rubber, pencil erasers, cornstarch and grilled meats. Farmy smoke, sweet peat and a flaming heather moor! Reduction cleaned things up a bit, lots of smoky sea air freshness, then eucalyptus, cowshed and Cullen skink. The palate was initially like smoked cocoa, burnt ends, spicy wood smoke, kippers and burnt herbs. With water more like peat-smoked porridge, some grapefruit sharpness, beach bonfire, smoked parma ham and salted peanuts.
