Tasting Notes
Evocative aromas of candle wax and honey on crumpets introduced complex arrangements of raisins, gooseberry tarts and Turkish tea with mint and dried apple. The palate carried lots of spice with ginger marmalade and peppermint alongside wonderful sweet elements of baklava, chocolate cake and digestive biscuits. A touch of pine tree and grapefruit emerged with water as green apples, lemon zest and orange oils combined. Juniper berries created lovely textures as dark cherries soaked in rum merged with cocoa powder and the fresh zip of mojito cocktails. Finally, mint tea and vanilla ice cream arrived with caramel wafers and soft fudge. After spending 7 years in an ex-bourbon hogshead this was transferred into a refill hogshead for the remainder of its maturation.
