The nose was sweetly comforting and perfumed – Starburst in waxed paper, orange travel sweets, flumps and liquorice allsorts; olive, lavender and rose soaps, ginger, cinnamon and clove. The palate had a similar profile – brittle toffee, salted caramel and honey, custard apple, rose Turkish delight and rhubarb rock, with a lip-tingling finish of oak, nutmeg and pink pickled ginger. The reduced nose had vanilla custard on apple pie, mandarin cheesecake and boiled sweets – all in a flowering summer garden. The palate developed a waxy, almost earthy, truffle-like intensity – melted butter on waffles, chocolate limes and grilled halloumi drizzled with honey and chilli.
