The aroma grabbed a hidden corner of our imagination with smoked gooseberry fool, green apples rubbed with Germolene antiseptic cream, peated pickled sushi ginger and navy style rum. The taste was no different with smoked mackerel and ginger Japanese pilaf and a Basque style stewed salted cod called bacalao with hearty potatoes, briny olives and layers of flavour. After reduction, the scent of peat poached pears, sweet smoky peas, lychees in rosemary oil and a lighted menthol cigarette. The taste buds did a ‘happy dance’ with a mixture of Mexican, Hawaiian and Indian cuisine in grilled pineapple and black bean tacos with curried mango and pear chutney.
