A superb and richly layered aroma greeted us. Aged mead mixed with exotic fruit salad juices then lime leaf, pomegranate syrup, honeycomb, camphor and putty. We found soft herbal waxes, olive oil cake, pasta water and dried mango. Reduction brought coconut creme brûlée, wild garlic, white stone fruits and mint tea with a spoonful of cough syrup. A brazen and wonderfully rich distillate. The neat palate was also fittingly rich and textural. Showing notes of jasmine tea, white pepper, lime cordial, Juicy Fruit chewing gum and piña colada. Some water brought out a more savoury note of spicy ramen broth, soft waxiness, dried wildflowers, gorse and more dried exotic fruit chunks.
