From a bourbon barrel into a Jamaican rum barrel after eight years – unsurprisingly, the rum influence is intense and a bit mad, something for more experimental whisky fans – try a summery mojito perhaps. The funky nose has pineapple, papaya and green peppercorns, lime juice and DIY stores. The palate combines pleasing textures with immediate warmth and flavours of Demerara sugar, coconut, peaches and pears; star anise and fresh mint on the finish. The reduced nose discovers vanilla, rhubarb, sea-buckthorn, muesli and sugar cane cachaça. On the palate now we get digestives and honey nut clusters, coconut cream and tiramisu, guava, mango and various other tropical fruits.
