We found ourselves in the kitchen making breakfast of blueberry pancakes, fruit scones with loads of sultanas and toast with salted caramel hazelnut butter. Then we tucked into a red berry fruit compote (in Germany called ‘Rote Grütze’), morello cherries, mixed fresh forest fruits, cranberry juice, cinnamon, a dash of rosewater and vanilla custard. Water added salt and pepper roasted walnuts as well as creamy coffee fudge on the nose, while to taste it was spiced banana French toast and a traditional Greek baklava with walnuts and honey. Following eight years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill Oloroso hogshead.
