Tasting Notes
Dry autumn leaves and cask char merged with roasted nuts and burnt pork crackling with rosemary and thyme before scorched salmon skin and salty sea shells delivered maritime aromas. The palate continued with honey glazed ham, lobster and prawns amid a syrupy and biscuity baseline reminiscent of toasted cereals, hazelnuts and cashews. Water unleashed a wave of smoked kippers, burnt gravy and black chimney soot. However on the tongue a gathering of pears, lemons and peaches joined star anise, dark chocolate praline and fine tannins. At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
