Heady aromas of pineapples, gooseberries and poached pears mixed with further tropical notes of coconut, mango and ripe banana before the sweetness of fudge and rice pudding arrived with pencil shavings. Tropical fruits continued on the palate alongside waxy textures and herbal flavours mixed with the cool warmth of peppermint sweets. After a dash of water came pineapple panna cotta and rhubarb and custard sweets with orange, lemon and honeysuckle. Green pine wood merged with tomato plants in a warehouse while sweet peas grew amid wheat and barley. Drier flavours of coconut husk joined peaches, apricots and clementines as herbal notes returned with grippy tannins and firm wood on the finish.
