Tasting Notes

Cinnamon, nutmeg and mace brought warming spice that complemented tobacco, marmalade and rum and raisin fudge. Then aromas of toasted cereals and autumn leaves merged with deep notes of teriyaki sauce, dark toffee and porcini mushrooms. On the palate a vigorous heat danced through ginger and pepper before tropical fruits, cinnamon and Manuka honey arrived. With water we found orchard fruits and boozy trifle amid walnut oil, hazelnuts and coconut husk. The palate then combined bitter chocolate and spicy Christmas pudding with liquorice stick and cloves before the finish came wrapped in burnt toast, wood char and strong black tea. After spending six years in an ex-bourbon hogshead this was transferred to a heavily toasted second fill hogshead for the remainder of its maturation.
