Tasting Notes
The nose offered honey on oak staves, dunnage – in a good way, old art classrooms, linoleum floors, old books and cinnamon toast; then vanilla, patchouli and sandalwood essential oils. The palate delighted with toasted nuts on a Knickerbocker glory, pineapple upside-down cake, toffee apple, salted caramel and hints of kelp. The reduced nose evoked iced wedding cake at a garden party – someone smoking a cigar behind the shrubs – and a bit more saltiness – suggestive of old ship’s timbers. The reduced palate had teasing perfumed sweetness, fruity confectionery and a finish of leather, oak, anise, linseed oil and wax – decidedly delectatious.
