Tasting Notes
A very sweet, summery, floral breeze wafted over us on a hot day as we sat in the shade enjoying cotton candy, sweet popcorn and spaghetti ice cream – noodle-shaped vanilla ice cream with strawberry sauce and shredded coconut on top. On the palate, we feasted on marzipan croissants, fluffy whipped cream and vanilla custard slices and, in the finish, churros dunked in a thick chilli-spiced hot chocolate. After reduction, we found spicy brown sugar and a fusion of chocolate, caramel and nougat. To taste we were served tarte tatin, pineapple upside down cake and roasted orchard fruits sprinkled with cinnamon, cloves and star anise. Following 12 years in an ex-bourbon hogshead, we transferred this whisky into a second fill sauternes barrique.
