Tasting Notes
The initial nose was a delicious dessert platter of honeycomb, sweet cookie dough and crème caramel, underscored by sugared almonds, a rustic hint of lavender and a woolly jumper. The palate delivered mint choc chip ice cream and red wine-poached pear. A wave of maple sweetness (bark, syrup and nuts) was balanced by vibrant plums, apples and limes. Water brightened the nose, giving us fresh pear juice, tinned cherries and honey nut loops, which led to gingerbread snaps and mandarin marmalade. The palate offered juicy red fruits, chocolate and caramel sauce over cinnamon buns. Notes of golden tobacco and cherry pie complemented an intriguing finish of stinging nettles and mango sweeties. After 13 years in an ex-bourbon hogshead, we transferred this to a first fill ex-bodega PX barrique for the remainder of its maturation.
