Tasting Notes

The neat nose revealed mentholated and highly fruity sherry, lots of prunes, figs, mango, marzipan and lychee syrup. It had a lovely underlying dunnage earthiness. Water brought out cherry sweets, bramble leaf, cassis and acacia bark, with hints of red and black liquorice. The neat palate displayed the sharply fruity tangs of a dark-fruit chutney made with 100-year-old balsamico, before we noted jasmine tea, eucalyptus and wormwood. Reduction brought fruit molasses of various sorts, blood orange cordial, juniper and pink grapefruit. At two years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
