A first glance we found a marriage of foamy banana sweets and pear drops. This then yielded to sweet coconut cake, American cream soda, vanilla custard tarts and orchard fruits glazed in honey. Luscious, sweet and enticing. Reduction brought marshmallow, juniper, crushed nettled, fir wood, lychee and candied grapefruit peel. The neat palate was pleasingly simple with condensed milk, banoffee pie and firmer notes of white pepper, spiced mead and pumpkin seed oil. With water we found mango juice, heather flowers, wild gorse, rose petals, dried papaya, lime cordial and fennel seed.
