Tasting Notes

After 13 years in ex-bourbon wood, this received further influence from a first-fill American oak oloroso hogshead. The nose entertained with figs, prunes and dates, marmalade on toast and coffee and walnut cake; plus subtler hints of sandalwood and tobacco. The rich, juicy palate had stewed prunes, raisins in triple sec and sugary espresso dregs; finishing with five spice and leather. The dusky and mysterious reduced nose conveyed wine-macerated plums in birchermuesli, honey drizzled on figs, marzipan, pastel de nata and spotted dick. The palate now gave us dried pineapple and toffee apples, treacle scones and Selkirk bannock, before finishing with clove, liquorice and wine-soaked wood.
