Tasting Notes

A wonderful aroma that brought to mind longer aged, older style Speysiders with aromatic notes of undergrowth and hedgerows. Also soft, supple waxy tones, apple rings, muesli, dried apricot and honeysuckle. Touches of camphor and spearmint were also noted. Reduction brought out more honeyed qualities, also medical aspects like wintergreen and orange cough sweets. Some freshly muddled herbs, baked apples, sultana and citronella wax. The palate was initially elegantly sweet, floral and full of lean, taut spices. Hints of Turkish delight, beeswax, camphor, lanolin and overripe mango. Water gave us stewed rhubarb, cookie dough, toasted cereals, exotic hardwood resins, herbal teas and almond oil.
