Tasting Notes
A deep and seductive nose brimming with honeycomb, fresh green apples, candy floss, pine sap, sandalwood, coconut shavings, buttermilk icing and yellow wildflowers. Exotic, complex, subtle and beautifully complex. Reduction gave us cinnamon pastries, lightly autolytic touches of sourdough, lime leaf, incense, scented pipe tobacco, pomegranate and toasted cereals. In the mouth we found gorse flower, lemon peel, wild blossoms, sweet liquorice, toasted almonds, heather honey, lightly hopped IPA and posh custard made with old Sauternes. A touch of water revealed chai tea, simmering wood spices, flower honey, rye bread spice, cocoa powder, stem ginger in syrup and a fragrant, herbal waxiness.
