Tasting Notes

We found this a very foody dram on the neat nose, giving us aromas of grilled gammon steak and scallops with smoked streaky bacon rashers and black pudding. It remained so on the palate as we added roast pork and apple sauce, plums wrapped in bacon, and honey-roasted carrots and parsnips. Following reduction we were transported on an old-fashioned schooner as it sailed into the sunset, enjoying chargrilled oysters New Orleans-style topped with garlic butter, creole sauce and parmesan. At eight years of age, we combined two ex-bourbon hogsheads from the same distillery into this cask for further maturation and marrying.
