Tasting Notes
A warm, sweet, rich and woody scent filled the room when we poured this sample, next to pipe tobacco, liquorice Allsorts and toasted rye bread with salmon butter. On the palate; rich with a tingling tartness that reminded us of hot cranberry, port and orange sauce over rich meat like goose. Water opened the ‘wood-seal’ and we baked apples with brown sugar, stuffed with raisins and sultanas as we sipped a Dark ‘n’ Stormy cocktail prepared with spicy Jamaican ginger beer. After 11 years in an ex-bourbon hogshead we transferred this whisky into a shaved, toasted and re-charred first fill barrique.
