Tasting Notes
First impressions on the nose conveyed a definite earthy, woodland vibe, with moss, fallen leaves, damp logs and freshly dubbined hiking boots – but we also got dried apricots, honey on buttered toast, apples, pears and cinnamon danish. The palate was robust, bringing lots of spice, wood, lemon zest and espresso, plus earthiness again with rye bread, speck ham and roasted sweet potato. The reduced nose conjured herbal tea in an alpine hut, stone fruits and maybe a hint of tar. With water on the palate, the ugly duckling became an elegant swan – dandelion and burdock, lemon and coconut-iced sponge cake, fruit-flavoured chews and golden syrup.
