The persuasive nose convinced us of paper burning in the hearth and chimney scrapings, Branston pickle, boquerones vinaigrettes and grilled pineapple on gammon. The palate’s initial hints of candy floss and crème brulée quickly gave way to willow twigs, jalapenos in brine, spicy smoked sausage, tinned fish and ash. The reduced nose combined burnt lavender, cigar boxes, seafood platters and yellow fruit sweets with a visit to a cargo boat hold (bales of wool, cardboard cartons, metal bulkheads). The palate sustained the juicy, fruity sweetness a little longer now, opening out to incense smoke, liquorice, Victory V’s and cigar ash.
