Tasting Notes
On the neat nose a very aromatic, sweet and fragrant smoke greeted the panel. Some were transported to a church service with candles and incense, others to a garden barbeque with charred glazed spareribs. The taste neat was not for the fainthearted – a massive chilli and smoky hit like from a firecracker stir fry sauce. Following the addition of water, the aroma was that of smoked cider vinegar, roasted squash, beetroot and horseradish. On the palate, still the firecracker, but now like a spoonful of simmering, spicy bone broth and a habanero pepper vegetable tempura lettuce wrap.
